- 4 Eggs
- 3 cup Spinach
- 3 cup Mushrooms
- 1 Bell Pepper coarsely chopped
- 2 tbsp Extra-Virgin Olive Oil
- Salt and Pepper to taste
Preheat the oven to 450°F. Grease a baking dish with the olive oil.
Slice the mushrooms, chop the spinach and bell pepper; place on the bottom of the baking dish.
Crack the eggs on top of the vegetables, and season with salt and pepper to taste.
Bake for 8-10 minutes, until the whites are set.
