Baked Eggs with Mushroom and Spinach

  • 4 Eggs
  • 3 cup Spinach
  • 3 cup Mushrooms
  • 1 Bell Pepper coarsely chopped
  • 2 tbsp Extra-Virgin Olive Oil
  • Salt and Pepper to taste
  • Preheat the oven to 450°F. Grease a baking dish with the olive oil.

  • Slice the mushrooms, chop the spinach and bell pepper; place on the bottom of the baking dish.

  • Crack the eggs on top of the vegetables, and season with salt and pepper to taste.

  • Bake for 8-10 minutes, until the whites are set.
